Pizza Oven for a Small Pizzeria

A small pizzeria does not necessarily need a small oven. The right size depends on the busiest hour, the share of delivery/takeout and the pizza diameter—not just dining-room seats.
Measure the rush
If your realistic peak is 25 pizzas/hour, sizing around 30–35/hour can make sense. If a delivery platform could push that peak to 45/hour, the equipment class changes.
Avoid buying twice
Leaving reasonable growth headroom is cheaper than discovering six months later that Friday-night demand requires a second oven and another installation project.
Keep the system serviceable
Do not sacrifice cleaning access, aisle width or service clearance just to fit more chamber volume. Kitchen layout affects real throughput.
Start with three demand cases

Seats are a weak sizing shortcut
Two 40-seat pizzerias can need very different ovens if one is dine-in heavy and the other does large delivery volume. Use actual or forecast pizza tickets by time block, then layer dine-in, takeout and delivery onto the same peak-hour demand.
Preserve an upgrade path
If the first oven is intentionally modest, plan where a second chamber or second oven could go later. Think about utility capacity, hood coverage and landing space before the room is full. A planned expansion path is cheaper than redesigning the kitchen after sales grow.
