Capacity claims vary widely across manufacturers, pizza sizes and bake styles. Treat the chart below as a screening range, then verify a real model at your pizza diameter and bake time.

Why the ranges overlap

A large deck oven can outperform a small conveyor, and a skilled stone-hearth operation can produce far more than a weakly staffed one. That is why a single categorical “deck = X pizzas/hour” number is misleading.

Use the chart as a shortlist

Start from required peak throughput plus headroom. Then compare models within the matching band and verify the manufacturer’s output at your exact pizza size. If your target sits near the top of a band, consider moving up a class or adding redundancy.

Translate hourly capacity into service pace

This pace is useful for checking the rest of the line. If the oven target is 100/hour but the cut-and-box station cannot clear a pizza every 36 seconds during a rush, the bottleneck has simply moved downstream.

Where the chart should stop

Do not use these ranges to approve a purchase by themselves. Once you know the right class to investigate, switch to manufacturer-specific chamber/belt dimensions, rated utilities, installation drawings and demonstrated output at your pizza size.
