Methodology: How the Capacity Planner Works

The planner intentionally uses broad capacity classes and a user-controlled headroom factor. It is designed to prevent false precision, because commercial pizza-oven output varies significantly by product and operating conditions.

Core calculation

Target operational capacity = peak pizzas/hour × (1 + selected headroom). The result is rounded upward to a practical five-pizza increment. The default headroom is 20%.

Classification bands

The planner maps that target to broad equipment classes informed by current commercial-oven buying guides and public capacity ranges. The bands overlap because real deck, conveyor and hearth systems overlap in output.

What the planner does not calculate

How we handle sources

We prefer manufacturer documentation, retailer capacity guides, industry references and primary safety standards where public. The sources page lists the main references used to set planning ranges and safety boundaries.

AI assistance

Site copy and code may be produced with AI assistance. Methodology claims are checked against the cited source set, but users should independently verify any purchase or installation decision with the equipment manufacturer and qualified local professionals.

Why the bands overlap

Commercial oven categories do not have hard borders. Different chamber sizes, belt widths, bake times and stacking configurations can produce similar hourly output. The classifier therefore returns an equipment class to investigate rather than pretending there is one correct oven at an exact threshold.

Why 20% is the default buffer

The default is a practical starting point, not an engineering rule. It creates room between observed demand and the equipment target so the recommendation is not built around perfect loading. Users can lower or raise the buffer to reflect demand volatility, growth plans and redundancy needs.

How pizza style affects the class

The planner gives extra weight to deck/hearth-style systems when the selected product is Neapolitan or the priority is artisan control. It gives more weight to continuous-flow systems when consistency and lower operator dependence are selected. Those adjustments change the shortlist; they do not certify that a specific model can hit the target.

Capacity bands are cross-checked against current commercial-equipment guides and public safety references listed on the sources page. We intentionally do not maintain a permanent database of model-specific ratings because those specifications, prices and product lines change. The exact model must always be verified at purchase time.
