Delivery concepts can produce sharp, synchronized rushes because multiple marketplaces drive orders into the same kitchen. Capacity planning should include reliability and redundancy—not just average throughput.

Combine every channel

Aggregate first-party orders, marketplace orders and any virtual brands that share the oven. The oven sees one combined queue even if the customer sees separate storefronts.

Consistency often wins

When throughput and repeatability matter more than artisan interaction, conveyor systems can become attractive. Stacked decks can also work when the concept needs more bake flexibility.

Redundancy has a value

If one oven failure stops the entire business, two independently operable chambers or ovens may be worth more than one theoretically higher-output unit.

Build one demand curve from every storefront

Export order timestamps from each marketplace and first-party channel, then combine them. Three virtual brands can each look moderate in isolation while creating one severe shared oven peak. Capacity should follow the combined queue because the equipment cannot distinguish which storefront generated the ticket.

Dispatch is part of throughput

Delivery kitchens need enough cut, box, label and driver-pickup space to clear the oven continuously. If finished orders stack up at dispatch, adding more oven capacity can increase congestion rather than improve customer times.

Consider graceful degradation

If pizza represents most of the kitchen's revenue, ask what happens when one chamber, belt or oven is unavailable. Two independent sources of capacity can preserve partial service and may be more valuable than one machine whose maximum rating is slightly higher.
