Eighty pizzas in a true peak hour is high-volume independent-pizzeria territory. At this point, the oven choice should be treated as a production-system decision rather than a standalone appliance purchase.

Planning target: With a 20% buffer, 80 pizzas/hour becomes about 100 pizzas/hour. Start by investigating a full-size conveyor or a substantial stacked-deck setup, then verify a real model at your pizza diameter and bake profile.

A hundred-per-hour target changes the conversation

With normal headroom, an eighty-per-hour peak points toward equipment that can comfortably clear around one hundred per hour under your actual product conditions. That usually means continuous-flow equipment or multiple active chambers.

Redundancy starts to matter

If one chamber, burner or belt stops during a Friday rush, the business can lose most of its production capacity. Stacked or parallel systems may be worth more than one oversized single point of failure.

The make line must feed the oven

At this rate the kitchen is producing more than one pizza per minute. Dough staging, topping stations, refrigeration placement and staff movement must support that pace or oven capacity will sit unused.

Delivery timing can favor conveyors

For concepts built around predictable delivery and pickup times, repeatable bake duration can simplify order sequencing. Artisan operations may still prefer decks or hearth systems, but should plan for enough parallel working area.

What to ask before ordering

Ask for output at your actual pizza diameter, normal bake time and realistic loading pattern. Confirm chamber or belt dimensions, utility load, ventilation listing, service clearance and local installation requirements. Treat any generic “up to” number as a starting point, not a guarantee.

Quick pace check

Eighty pizzas per hour is about 1.33 pizzas per minute. With 20% headroom, a 100/hour target means one pizza every 36 seconds. That is fast enough that small delays in topping, oven loading or boxing compound quickly.

Model a five-minute burst

At the 100/hour planning target, the line must move a little more than eight pizzas every five minutes. Use a five-minute test during a vendor demo or kitchen rehearsal. It exposes loading and landing problems that can disappear inside a broad one-hour average.

Redundancy has operating value

At this throughput, losing the only active oven can stop a large share of sales immediately. Compare one oversized appliance with two independently operable chambers or ovens. The second option may cost more up front but can reduce operational risk and give you more control during partial-load periods.
