Thirty pizzas per hour is where a small pizza program starts to feel like a real production station. A single deck can still be practical, but ticket compression and recovery become more important than the raw number of pies that fit in one load.

Planning target: With a 20% buffer, 30 pizzas/hour becomes about 40 pizzas/hour. Start by investigating a larger single-deck system, with a double-deck option if rushes are compressed, then verify a real model at your pizza diameter and bake profile.

Single deck can still be enough

For many thin-crust or New York-style menus, a properly sized commercial deck can cover this demand with useful reserve. The decision should be based on demonstrated output at your bake setting, not simply on chamber width.

When a second deck earns its footprint

A double-deck system becomes attractive if you need two temperature zones, frequent back-to-back loads, or a backup chamber during busy service. It can also separate products with different bake profiles without changing one shared setting.

Watch the prep line

At roughly thirty pizzas an hour, dough stretching, topping and boxing can start to become the bottleneck before the oven does. Buying a much larger oven will not improve output if the make line cannot keep it continuously fed.

Plan utilities now

Even a seemingly modest step up in oven class can change electrical, gas or ventilation requirements. Confirm the exact appliance load and installation listing before locking the kitchen layout.

What to ask before ordering

Ask for output at your actual pizza diameter, normal bake time and realistic loading pattern. Confirm chamber or belt dimensions, utility load, ventilation listing, service clearance and local installation requirements. Treat any generic “up to” number as a starting point, not a guarantee.

Quick pace check

Thirty pizzas per hour means one finished pizza every 2 minutes. A 40/hour planning target is one every 90 seconds. At that point, the oven can still be a batch system, but loading discipline and recovery start to determine whether the kitchen really reaches the target.

Single deck or two chambers?

If your menu is simple and one bake profile dominates, a strong single deck may be the cleanest solution. A second chamber becomes more valuable when you need different temperatures, have compressed delivery waves, or cannot afford to stop pizza service while one chamber is cleaned or adjusted.

Measure the upstream pace

Before paying for more oven than you need, time how quickly the team can stretch, top and stage thirty pizzas. If prep tops out at twenty-five per hour, the oven is not the first bottleneck. Capacity planning works best when the make line and oven are sized to the same peak scenario.
