Twenty pizzas in the busiest hour is low enough that buying a high-output line usually creates more cost and footprint than value. The important question is whether those twenty orders arrive evenly or in short bursts after a bar rush, event intermission or delivery push.
What usually fits at this volume
A modest commercial deck can be a strong fit because it gives enough batch space without forcing the kitchen into a conveyor workflow. Countertop equipment may also work for smaller pies, but it leaves less recovery margin and can become uncomfortable if several tickets land at once.
The real risk is burst demand
At this level, average capacity is less important than queue behavior. Five or six orders arriving within ten minutes can temporarily require a much faster pace than twenty per hour. If that happens often, the extra headroom is worth more than the smallest possible footprint.
Check pizza diameter before you buy
A chamber that looks generous with 12-inch pizzas can become restrictive with 16- or 18-inch pies. Ask the seller to show how many of your actual diameter fit with realistic spacing, not just the maximum deck dimensions.

Bars adding a pizza menu, small cafés, food trucks with a limited pizza program, and restaurants where pizza is one part of a broader menu can all sit near this demand band.

Ask for output at your actual pizza diameter, normal bake time and realistic loading pattern. Confirm chamber or belt dimensions, utility load, ventilation listing, service clearance and local installation requirements. Treat any generic “up to” number as a starting point, not a guarantee.

The average still says 20/hour, yet the short burst behaves more like a 32/hour period. If that pattern is normal, prioritize reserve chamber space and recovery instead of choosing the smallest unit that can theoretically average 20.
