New York Style Pizza Oven Sizing

Large New York-style pies make chamber geometry especially important. An oven that looks generous on square inches may not load efficiently with 16- or 18-inch pizzas.
Diameter first
Verify how many of your actual pies fit per deck with usable spacing. For 16- and 18-inch products, dimension drawings are more useful than generic “X pizza” marketing claims.
Deck and conveyor can both work
Traditional deck ovens provide direct bake control, while conveyor systems can support repeatable high-volume production. Choose from the throughput target and product standard your concept requires.
Headroom for delivery rushes
NY-style concepts often combine dine-in, slices, takeout and delivery. Size from the combined busiest-hour requirement, not one sales channel in isolation.
Model the largest common pie
New York-style concepts often sell multiple diameters. A deck that looks generous for 14-inch pies can lose an entire loading position with 18-inch pies. Use the largest size that represents a meaningful share of the peak, then test the expected mix rather than the smallest menu size.
Batch rhythm drives real output
For deck service, compare bake time with how quickly the team can load and unload a full chamber. A six-minute bake does not mean exactly ten perfect batches per hour: door openings, partial loads, turning and recovery reduce theoretical output. That is why a real repeated-load test is more useful than multiplying one batch by sixty minutes.
