How to Estimate Peak Pizzas per Hour

The best oven calculation starts with the best demand number. “We sell 200 pizzas per day” is not enough because the kitchen may need to produce half of them in a short dinner rush.
Existing restaurant: use timestamps
Export several busy weeks of POS order timestamps. Group pizza orders into rolling 60-minute windows and find the repeated high points—not just the single craziest holiday spike. Your design peak should reflect a rush you realistically expect to repeat.
New restaurant: model a rush case
Estimate covers or orders during the busiest hour, multiply by the expected pizza-order share, then add delivery/takeout if those channels overlap. Create a base case and a stronger case instead of trusting one forecast.

Avoid false precision
Demand forecasts are uncertain. Round up to a practical capacity band and verify how the candidate oven behaves at your actual pizza diameter and bake time.
A simple way to measure a real peak
- Choose three to five representative busy services rather than one exceptional event.
- Count pizzas ordered in 15-minute blocks.
- Take the busiest repeatable block and multiply by four to express it as an hourly pace.
- Compare that with the busiest full 60-minute total.
- Use the higher defensible figure, then add your growth/rush buffer.
Example
If the busiest full hour is 52 pizzas but several normal 15-minute blocks hit 16 pizzas, the short-burst pace is 64/hour. That tells you the kitchen experiences compression that the 52/hour average hides. You may not need an oven sized to run 64 continuously, but you should test whether it can absorb that burst without a long queue.
