High-Volume Pizzeria Oven Capacity

Once demand moves above roughly 100 pizzas/hour, capacity planning stops being only about one oven. The make line, loading pattern, landing area, ventilation and backup strategy can all become bottlenecks.
Design the line, not the box
A high-output oven cannot fix a make line that cannot feed it or a landing station that cannot clear finished pizzas. Model the complete flow from stretch/top to bake to cut/box.
Parallel capacity reduces risk
Two independently operable ovens or chambers can provide both output and resilience. A single very large oven may offer less protection against downtime.
Validate with vendor data
Ask vendors to document throughput at your pizza diameter and bake profile. For large capital purchases, a test bake or reference installation is more valuable than a generic brochure number.

Use a capacity test that resembles Friday night
A meaningful vendor demonstration repeats loads, includes realistic topping weight and uses your actual pizza diameter. For a multi-oven system, ask what output remains if one oven is taken offline. That answer can be more important than the maximum brochure number.
