Fuel choice should follow the exact equipment and site, not a generic claim that one fuel is always cheaper or better. Capacity can be excellent with either gas or electric equipment.
When electric is attractive
Electric equipment can offer precise controls and avoids a new gas line where suitable electrical service is already available. The constraint is often the building’s available voltage, phase and amperage—not the oven technology itself.
When gas is attractive
Gas is common in high-output commercial kitchens and can be attractive where suitable gas infrastructure already exists. The exact input rating, combustion air and ventilation requirements must be verified for the listed appliance.
Do not choose fuel before checking the site
Before narrowing models, document the available electrical service, gas availability, hood/ventilation situation and local approval process. A great oven on paper can become a bad project if the building cannot support it economically.
Capacity still comes first
Choose the required throughput band first, then compare gas and electric options inside that band. Do not sacrifice Friday-night capacity just to stay with a preferred fuel.

Ask for the utility sheet early
Before signing a lease or ordering equipment, get the exact model's installation manual and utility requirements. A small difference in model choice can change panel capacity, gas demand, hood design or make-up-air needs enough to affect the project budget.
