How many pizzas per hour can a commercial pizza oven make?
It varies widely. Compact commercial units may produce in the low tens per hour, while large conveyors and multi-oven lines can exceed 100 per hour. Exact output depends on pizza diameter, bake time, loading and recovery.
How much headroom should I leave?
20% is a useful default planning buffer. Concepts with volatile rushes or fast growth may choose more.
Is a conveyor better than a deck oven?
Not universally. Conveyors emphasize repeatability and continuous flow; decks emphasize batch control and bake flexibility.
Can the calculator design my hood or gas line?
No. Those are site- and equipment-specific safety/code questions for the manufacturer and qualified local professionals.

Why size from peak hour instead of daily sales?
Daily sales smooth out the rush. Oven queues form when many orders arrive close together, so the busiest repeatable hour—or even a recurring 15-minute burst—is a better starting point for equipment sizing.
Does pizza diameter change capacity?
Yes. Larger pizzas consume more chamber or belt area and can change the loading pattern. Verify throughput at the diameter that dominates your busiest service period.
Is 20% headroom always enough?
No. Twenty percent is a planning default, not a rule. Volatile event traffic, rapid growth, large delivery waves or limited backup capacity may justify more reserve.
Should I buy an oven rated exactly at my peak?
Usually not without a careful model-specific test. Published ratings may assume ideal loading. A buffered target gives room for recovery, product variation and real service conditions.
When does redundancy matter?
Redundancy becomes more valuable as pizza sales become mission-critical. At high volume, two independently operable chambers or ovens can preserve partial service during cleaning, adjustment or a failure.
