The core rule is simple: size the oven for the busiest sustainable hour you need to survive—not for an all-day average. The hard part is converting that demand into an equipment class without assuming every oven behaves the same.

1. Start with peak-hour demand

Use POS timestamps or a realistic forecast to estimate the number of pizzas that must leave the oven during the busiest 60 minutes. If your concept is new, model a conservative base case and a stronger rush case.

Example: if you expect 45 pizzas in the busiest hour and want 25% headroom, investigate equipment capable of roughly 60 pizzas/hour in your actual pizza size and bake style.

2. Add headroom before you shop

Running any oven at its absolute published ceiling leaves little room for order bunching, recovery loss, remake orders or growth. A 15–30% planning buffer is usually more useful than matching demand exactly. Larger growth plans or mission-critical delivery volume can justify more.

3. Pizza diameter changes the physical problem

An oven that fits six 12-inch pizzas does not necessarily fit six 16-inch pizzas. Compare the actual chamber, deck or belt dimensions against your product—not just a headline pizzas/hour number. Large pies can reduce effective batch count sharply.

4. Choose a workflow, not only a capacity

Deck ovens favor batch control and traditional deck baking. Conveyors favor repeatable continuous flow. Stone-hearth systems can be extremely productive but often depend more on operator skill. The best class is the one that meets output while fitting your product and labor model.

5. Verify the exact model

Before purchase, check manufacturer-rated throughput, bake time, recovery behavior, chamber/belt dimensions, electrical or gas input, clearances, ventilation listing, service access, warranty and local approval requirements.
