14 vs 16 Inch Pizzeria Oven Planner

A 16-inch pizza has about 31% more area than a 14-inch pizza. In a fixed chamber, that can reduce batch count or force more spacing than the headline deck dimensions suggest.

Why size matters

For large-pie concepts, pizza diameter can be as important as bake time. Always check a dimensioned chamber drawing and model the actual loading pattern.

Conveyor width matters too

A belt that comfortably runs smaller pies side by side may not support the same pattern with 16-inch pizzas. Ask the manufacturer for throughput at your diameter.

Plan from your real menu

If you sell multiple sizes, size around the mix that dominates the busiest hour—not the smallest pie on the menu.

Why two inches can remove a whole loading position

A 14-inch pizza is about 154 square inches; a 16-inch pizza is about 201 square inches—roughly 31% more area. In a rectangular deck or on a fixed-width belt, the practical effect can be larger than 31% if the extra diameter prevents two pizzas from sitting side by side.

Check your dominant mix

If 16-inch pizzas are only a small share of sales, model the peak using the real size mix rather than assuming every order is the largest pie. If the 16-inch size dominates Friday-night sales, use it as the design case even if smaller pizzas are more common during lunch.
